A living museum of kissaten culture — a portal to a Japan where coffee was aged like wine and brewed with monastic devotion. Founded in 1948, this Ginza institution stores green beans for years, sometimes decades, before roasting them on a hand-cranked drum roaster. The aged coffees develop flavors impossible to replicate: dried fruit, cedar, tobacco, and a syrupy sweetness that lingers.
